Duck Pasta
SERVINGS: 6-3 cups each
INGREDIENTS:
oliveoil - 1/3 cup
onions,chopped - 4 cups
garlic, minced - 2 Tbsp
cooked bacon,chopped - 3/4 cup
duck,cooked,diced - 4-1/2 cups
tomatoes, drained, chopped - 4-1/2 cups
sliced black olives, drained - 3/4 cup
dry red wine - 1-1/2 cups
salt 1 1/2 tsp
black pepper - 3/4 tsp
penne/ziti pasta, cooked - 3 qts
Parmesan cheese, grated 3/4 cup
DIRECTIONS:
1. Heat oil over medium heat; add onions. Cook for 5 minutes, stirring occasionally.
2. Stir in garlic, bacon and duck; cook for 5 minutes. Add tomatoes, olives, wine, salt and pepper. Simmer for 25 to 30 minutes, stirring occasionally.
3. Toss with pasta. If needed, season with salt and pepper.
4. Garnish with Parmesan cheese. Serve immediately.
